Beef Burrito Casserole

Ingredients:

1 1/2 lb ground beef
1 can Refried beans
1 cup Bisquick
1/4 cup Water
1 Jar (16 oz.) medium salsa
1 1/2 cup Shredded cheese
2/3 cup Sliced green or black olives 1 tsp salt

Directions:

Brown the hamburger and drain. Mix refried beans, Bisquick, and water together and put in a greased 9 x 13 casserole. Layer beef, salt, cheese, and olives. Bake at 375 degrees F for 30 minutes. Serve with iceburg lettuce, sour cream and tortilla chips.

Ingredients:

  • 1 1/2 pounds lean ground beef
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 (6 ounce) can tomato paste
  • 2 1/4 cups water
  • 1 (14.5 ounce) can peeled and diced tomatoes
  • 1/3 cup dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 eggplant
  • 1 onion, sliced
  • 1/2 cup dry bread crumbs
  • 1 cup grated Parmesan cheese
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, saute the ground beef, onion and garlic for 5 to 10 minutes. Drain excess fat. Stir in the tomato paste, water, tomatoes, parsley, thyme, oregano and basil. Set aside.
  3. Slice eggplant into 1/4-inch rounds. Place a layer of eggplant into the bottom of a lightly greased 9x12-inch glass baking dish. Then place a layer of the ground beef mixture over the eggplant, followed by a layer of sliced onion. Top this with 1/2 the breadcrumbs and cheese. Then repeat the layers: eggplant, ground beef mixture, sliced onion and remaining breadcrumbs and cheese.
  4. Cover and bake at 350 degrees F (175 degrees C) for 1 hour, remove foil and bake for 20 more minutes.


Broccoli Hamburger Casserole

Ingredients:

  • 2 (16 ounce) packages frozen broccoli
  • 2 pounds ground beef
  • 1 (8 ounce) package fresh mushrooms
  • 1 large onion, chopped
  • salt to taste
  • ground black pepper to taste
  • 2 (10.75 ounce) cans condensed cream of celery soup
  • 1 (16 ounce) container sour cream
  • 1 (16 ounce) package shredded Monterey Jack cheese
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Prepare the broccoli according to package directions.
  2. In a skillet over medium heat, mix the ground beef, mushrooms, and onion. Cook until beef is evenly brown; drain grease. Season with salt and pepper, and mix in cream of celery soup and sour cream. Continue cooking until heated through. Transfer to a medium baking dish, and evenly layer with broccoli. Top with cheese.
  3. Bake 1 hour in the preheated oven, until bubbly and lightly brown.


Hamburger Potato Casserole

Ingredients:

  • 1 pound lean ground beef
  • 3 cups peeled and thinly sliced potatoes
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup chopped onion
  • 3/4 cup milk
  • salt to taste
  • freshly ground pepper, to taste
  • 1 cup shredded Cheddar cheese
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium skillet over medium heat, brown the ground beef; drain fat.
  3. In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
  4. Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

Ingredients:


1 box (15 oz) Pillsbury refrigerated pie crusts, softened as directed on box
1½ Ib lean (at least 80%) ground beef
2 large onions, chopped (1 cup)
12 oz prepared cheese product (from 16-oz loaf), cubed (about 2 cups)
½ cup Thousand Island dressing
2 teaspoons yellow mustard
16 round dill pickle chips or 8 oblong dill pickle slices
14 teaspoon sesame seed
Lettuce leaves
2 plum (Roma) tomatoes, sliced

Directions:

1. Heat oven to 375°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie plate. 2. In 12-inch skillet, cook ground beef and onions over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
3. Stir in cheese, dressing and the mustard. Reduce heat to low; cook 2 to 3 minutes, stirring occasionally, until cheese is melted. Spoon beef mixture into crust-lined pie plate. Arrange pickle chips over beef mixture.
4. Top with second crust; seal edge and flute. Sprinkle with sesame seed. Cut slits in several places in top crust. Cover crust edge with 2- to 3-inch-wide strips of foil to prevent excessive browning; remove foil during last 15 minutes of baking.
5. Bake 35 to 40 minutes or until crust is golden brown. Let stand 10 minutes before serving. Top pie with lettuce and tomatoes.

  • 1 cup uncooked white rice

Ingredients:

  • 1 1/2 pounds lean ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon dried leaf oregano
  • 1/2 cup taco sauce
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • dash of Tabasco sauce
  • 6 ounce bag corn chips, slightly crumbled
  • chopped onion
  • chopped tomato
  • grated cheese
  • chopped lettuce

Directions:

Pan Size: 3 quart casserole Oven Temp: 350 Time: 10-15 minutes Brown ground beef; mix in the taco sauce, tomato sauce, chili powder, garlic salt, oregano, Tabasco sauce. Simmer 10 minutes. Put half on bottom of a 3-quart casserole. Top with about half of the crumbled chips. Add remaining ground beef mixture, some chopped tomato, onion, chopped lettuce, and grated cheese (use 1 cup or more). Put remaining corn chips on top. Bake at 350° for 12 minutes, or until hot and cheese is melted.

  • 1/2 cup chopped onion
  • 1 can (about 10 ounces) red enchilada sauce
  • 1 can (10 1/2 ounce) condensed cream of mushroom soup
  • 1 can (10 1/4 ounce) cream of chicken soup
  • 1 can (4 ounces) chopped green chile peppers
  • 1 cup milk
  • 1 small clove garlic, minced
  • 1 package (about 7 ounces) tortilla chips, coarsely crumbled
  • 8 ounces grated Cheddar cheese or Mexican cheese blend
  • 1 can (4 ounce) chopped ripe olives

Directions:

Preheat oven to 375°
In a large skillet, brown hamburger with onion; remove from heat and drain off excess fat. Add chili sauce, soups, chopped chile peppers, milk, and minced garlic; mix well.

In a greased 9x13x2-inch baking pan, place a layer of half the coarsely crumbled tortilla chips; top with half of the hamburger mixture. Layer with remaining crumbled tortilla chips, then remaining meat mixture. Sprinkle cheddar cheese and chopped black olives over top. Bake at 375° for 35 to 40 minutes. 1 can cream of mushroom soup
1 (8 oz.) package shredded cheddar cheese
1 pkg. frozen tater tots

Directions:

Brown hamburger and drain. Mix soup with enough milk to thin. Spray casserole dish with cooking spray. Spread hamburger across the bottom of the dish. Add soup and cheese. Then cover entire dish with tater tots. Bake uncovered at 375 degrees for 35 minutes or until tater tots are at your desired crispness.

1 teaspoon paprika
1/2 teaspoon cumin seed

Dash pepper
4 cups (2 1-pound cans) kidney beans
1 cup (8-ounce can) tomato sauce
3/4 cup crushed corn chips
1/3 cup Burgundy wine (optional)
1/3 cup grated Cheddar cheese

Directions:

Brown meat in heavy skillet; spoon into a 2-quart casserole. Melt butter in skillet. Add onion and garlic; sauté until onion is clear. Add spices, beans, tomato sauce, corn chips and wine. Mix thoroughly and spoon over meat. Sprinkle with cheese.

Bake in oven (350°F.) for 30 minutes, or until heated through and bubbly.
